Adopting healthy cooking habits for Indian fare

Between doing laundry and mopping floors, what runs through our minds are the details of countless recipes, which are fondly associated with memories. Most homemakers and anyone who fancy cooking traditional Indian fare would know the feeling. The flaky crusts of a perfectly done cookie, the rich creamy consistency of a sauce or the thickness of the curry deserve all the contemplation and meditation and I give them that in between my daily chores. Ingredient by ingredient, every step of the recipe needs reflection and innovation. And the end result can always use up an extra pinch of sugar or a second dollop of ghee to add to the delight.

However, the health conscious would definitely frown at my food filled with love, and fat! Well as I struggled to appease our family doctor and dietician with what was served on the table every day, I struggled with the taste—something I have never had a problem with. Even a bad food day in my kitchen could match up to the best north Indian restaurants in Gurgaon but adopting healthy cooking habits was detrimental for my kitchen, until I came across a friend, a food blogger, who passed on these tips.

When you take out the clarified butter and heavy spices from the food, the focus is suddenly shifted to the underlying rich and subtler flavours that are available in abundance to play around with. Indian fare is a medley of veggies, dairy products, legumes and other grains and each lend a distinct flavour to the food, beside the onion garlic paste and spices. So the tip number one would be to start focusing on the taste of each and every ingredient individually, says a chef at a home delivery restaurants in Saket

Moreover, she is also a big advocator of a full course meal everyday rather than just the main course. It gives me space to sneak in a few nutritious bites in the face of homemade soups, baked veggies, sprout salads and grilled kebabs. It is also very satiating so the main meal that is laden with carbs only constitutes of a very little portion.

Round off your meal with Mukhwaas!

The North Indian cuisine is known for its elaborate multi course meals. The fare, fit for the royalty, includes various shades of flavours and aromas that will have your senses enamoured. Before the common folk admired and adapted the royal salver into their humble daily lives, there were elaborate courses befitting, seasons, moods, main course’s preparation method, time of the meal and even the digestive system.

One such small ritual in this imperial meal was Mukwaas-- a spoonful of sweet and aromatic flavours which disentangle your senses from the rich and spice laden flavours, refreshes the mouth and sets the digestive juices roiling. This unique course in the meal is now usually limited to just fennel seeds, but did you know there were over 100 recipes for that, says a chef at a popular restaurant in Saket. Here are a few samples.

3 Best Restaurants in Delhi Serving the Most Authentic Cuisine

It is indeed surprising that the most appealing and prestigious restaurants in New Delhi do not, in fact, serve Indian food while Japanese, Italian, French and Chinese restaurants dominate the list of best restaurants in Delhi. That is not to say that food native to India is dead though. Worldwide Indian favorites such as Tandoori Chicken have their history intact in the kitchens of New Delhi, and are still recreated with astounding innovation and experimentation with different herbs and spices native to India. Dhaba by Claridges is one of the best restaurants in Delhi that tries to tweak traditional classics by modern culinary methods.

We bring you the best restaurants for local food and other Indian cuisines in New Delhi:

 1.    Dum Pukht

Dum Pukht specializes in Awadhi cuisine native to Lucknow. Meats, herbs and spices are placed in a pot sealed with dough after which the contents of the pot are slow-cooked over a low flame for hours. The meat cooks in its own nutritive juices, soaking the flavors of the seasoning.  The resulting soft and savory non-vegetarian delight is offered as a specialty at the restaurant that named itself after the divine dish.

2.    Dhaba by Claridges

Specializing in North Indian cuisine, the opulent restaurant is themed after a quintessential road-trip through Northern India. Dhaba by Claridges tries to recreate an ideal dhaba experience for its customers who like to indulge in North Indian food on roadside eateries. It offers a number of rustic dishes including Kanastari Baingan, Dhaba Chilli Chicken, Balti Meat and Amritsari Tawa Chaap. Its rather odd ambience is what drives tourists and locals to experience their traditional food native to North India.

3.    Karim's

The restaurant serves up authentic Mughlai cuisine that would take you back to the imperial kitchens of the ancient Mughal Empire. Karim’s is a quite a popular eatery in New Delhi that has recently spread out to new locations. The restaurant’s century- old original store in Old Delhi nonetheless remains to be the ultimate destination for domestic food explorers and tourists alike. Famous local dishes offered by Karim’s feature Mutton Burra Kebabs and the much fabled Tandoori Chicken.

Ugly veggies for delight!

That a restaurant menu is laden with all the delicacies which a human would like to feast upon is no hidden thing. But that the same menu houses some crappy (read: revolting) a dish too surely is. And that is probably because no one ever brings themselves to order those. Why? Because they are a tad too, well, boring. And hideous to taste buds.

Here are some dishes that north Indian restaurant in Delhi that sound hideous or maybe even look hideous. But just a mouthful of it will leave you revelling in its delectable flavour.

north indian restaurant in delhi

  • Eggplant: The name in itself is weird enough to compel people to think how awkward the taste will be. True, it is unsightly (for the use of a better word!), but dig into it and you will know that its taste is not. An eggplant has savoury vegetables filled inside; it’s only when you will split it open that you will know how magical the taste is. It is marinated for some time before being put on coal stove in an iron utensil.

  • Pumpkin: Evokes a deadly, ugly image, right? This sweet and sour, tangy veggie will surely leave you up for more helpings. Only the name sounds retarded; if cooked correctly it is good enough for you to demand more of it. Always some more!

  •  Zucchini: Evokes childhood memories when moms would fill in the tiffin boxes with the unpleasant vegetable and would snub when the tiffin would come back untouched and uneaten. Just a mouthful of it at Dhaba by Claridges Saket will revamp those memories forever. Yes, taste the veggie at DBC, replete with garam masala and it will be the show-stopper amidst all the dishes on the table. You will be surprised to find yourself licking your fingers over Zuchini. Yes, sure you will!

Indian Food and Its Relative Calorie Coun

India which is the second most populous country of the world enjoys a rich mixture customs and individuals. This exuberance through diverse regional races is then reflected in the clothing habits, food habits and various religious beliefs. As one moves from the northern region to the southern parts and vice versa there is a complete shift of tastes and culinary respites. It is in fact amazing that a north Indian food in Delhi may taste uniquely different when cooked in some other region. The popular food which we enjoy has also a historical heritage attached to it. One can clearly distinguish the impact of ancient civilization as has been invaded by the British, Mughals and others, mirrored in the domestic food and as is served in the best restaurants in Delhi or any other region.

However with the world increasingly becoming aware of the importance of healthy food, it has become all the more necessary to understand how a particular food affects your body. To aid this consciousness here are some most popular regional food items and their respective calorie count:

-Roti

It is a traditional Indian bread and is pretty thin. A 6-inch roti offers a number of 85 kilocalories. With thin crust it becomes a parantha, which can then be stuffed with potatoes, spinach or onion as per the taste. This version of Indian bread then offers a surplus of 180 kilocalories.

-Rajma

The staple platter for north Indian food in Delhi and other northern regions is well served with rice. A melange of spices, tomato puree and onion, it contains good quality of proteins. Being excellent for health, it also works well for muscle-building. Generally 150 grams of rajma add to 153 kilocalories.

-Rasam

Most popular in the southern region of the country, it is a household dish. Low in calories it is ideal for those struggling to manage the weight. 150 grams of it, only contribute towards 30 kilocalories.

-Fish

Since the southern region of the country is closer to the coastline, fish is one of the most cooked dishes in this region with several variations to suit the taste. 200 grams of fish curry contains 460 kilocalories.

Awesome flavors of Delhi

Hi, I am Prerna, Mumbai based resident. Recently, have got married and have shifted to Delhi.  Bing a resident of Mumbai, needless to confess, i am a bit biased about my place. No matter which corner of the nation I am in, i know, will end up always favoring my Mumbai. One, this place is special and subsequently, i have grown up here, which automatically makes this place beautiful to me.

best restaurants in delhi

No matter which place I’m or will be in, Mumbai will always hit my priority list. When I was in school, every single day, my mumma would give me ten rupee and I would religiously save that 10 rupee aside. Vada paw is my all-time favorite snack, which would cost a few bugs, and to be honest, i would somehow manage eating it from my friend’s pocket money. When I would collect good amount of around 80 or 100, some of the best restaurants were my one stop destination.

I confess being a big foodie, and just cannot live without spicy north indian food Delhi or Mumbai, be it anywhere I am in.

When i got married, I had no clue that would miss the spicy and homely flavors. I seriously craved for some ‘good’ food. For a few days, when i came to Delhi, felt as if would never get a simple vada paw here, forget the rest. But yes, I was wrong, for which I would accredited best restaurants in Delhi.

Though there’s a big time difference in the spice contents, and the preparation methodology, but who cares??? Something that remains almost the same is ‘taste’. The only thing that has to be taken into consideration is that you explore the fine eatery out of many.

When in Delhi, won’t be wrong to say that it would be nothing less than a sin to miss out on delicious North Indian dishes which makes all the difference and creates a distinguishing Delhi’s flavour quotient. It’s true and might sound a little overblown to some of you, but the fact remains unchanged that majority of us just can’t resist without a heavy dose of ghee, milk, butter and honey.

Looking Out for the Restaurant Faux Pas!

I can’t tell how it feels to be robbed at a place where nobody comes to your rescue, mainly because you make the plunge at your own peril. No, I am not talking about some deadly terrorist encounter. I am talking about setting a foot into a restaurant and setting the same foot out, robbed of all money and sadly, satisfaction, too.
best restaurants in delhi

One such encounter that I had at a restro, supposedly one of the best restaurants in Delhi, left me thinking about the authenticity of the word -‘best’. While some restaurants, like Dhaba By Claridges, Pind Baluchi, or Dawat live upto their names, others just come across as a terrible disappointment. While zeroing on a North Indian Restaurant in Delhi, here are the most common things NOT to look out for!

The old, boring food

Every North Indian Restaurant in Delhi will have the usual Dal Makhani and Shahi Paneer on its platter. How the restaurant reinvents it decides how things click with the customers. Nobody would splurge their hard earned money on a dish that can be as easily cooked at home too. New is the fad these days. Adopt it, and stick to it!

Candle lit Ambience and Non engaging Staff

Ask today’s youngsters or even elders for that matter, Candle lit ambience is a thing that has ceased to be a charmer. People these days hunt down places that could cater to their frolicky taste and enjoy their meals and drinks in a wacky manner. Quirky ambience punctuated with bizarre elements like cool feedback chits pasted on the walls strike a chord with the audience. Well that’s closely enough to leave a long lasting impression on the foodies.

A non engaging staff is a big turn off, too. Imagine an attendant who makes an unbothered expression at your orders and doesn’t nod or say yes as a token of affirmation? An engaging and a warm staff, hence, is imperative to a pleasant dining experience.

How Planning Comes in Handy While you are Cooking

I remember waking up to my mother instructing me to have things in control at home while she was leaving for a holy trip for a few days. For days I was baffled to wake up and sleep back with a concern about what to cook buzzing all around and about the day. What to prepare is the only thing I was perturbed with. It wasn’t the case that I haven’t cooked before but planning a meal is going to haunt me for ages now. It is not solely about the taste which may decide a meal but there are a lot many considerations and thoughts which get into while preparing a meal.

When I was preparing a meal I made it a point to make it with a right balance of taste and health. Though it was a lot of trouble I confess, to prepare an appetizing palate considering the health part of it but few tips which I learnt from a chef from the best restaurants in Delhi came to the rescue. Sticking on to the nutritious value I prepared a plan to make the supper delectable. After chalking out a strategy I decided to prepare the breakfast nutritious, lunch savouring and heavy and dinner mostly light with a dessert with some home-made snacks in between.

North Indian restaurants in Gurgaon

Here are a few tips I adhered to while I planned and prepared the meals-

-Avoid including processed and readymade food, since we don’t have any control over its make-up. When having salads do not include pickles and dips into it. Apart from adding unnecessary calories they are unhealthy.
- I learnt this from a chef of a North Indian restaurants in Gurgaon that you must revisit the list of your groceries before you actually go shopping. Generally we don’t have a fixed idea what we will be buying and therefore the unrequired fuss about what to prepare. This kind of planning becomes much important in a big set up like a restaurant where managing an inventory itself is a task complex enough.

-Pick a leaner piece of meat for palates which cannot be cooked with a lot of oil. Choose for extra virgin olive oil to make it healthier. Pick the organic, non-polished variants of rice and  pulses. While stocking on essential herbs and exotic vegetable for extra flavours do remember to opt for whole grain bread and pasta.

Conclusively a bit of planning and sticking to something healthy and tasty at the same time helps you sail through even through the toughest time you are having while cooking.

Splurge on the Street Food at Saket this Monsoon!

How often do you find yourself binging on that one extra plate of Pani Puri or those two extra glasses of the street vendor’s lemon water? Very often, right? No one understands the ethereal feeling of gorging on the street food like a typical Delhi-ite does. But then, a Delhi-ite must also understand that if there is anything that holds the potential to give you turbulent pangs of sickness in Monsoons, then it is the street food only.

It’s already Monsoon in Delhi, are people are becoming increasingly wary of what they splurge on. Parental sermons reek of ‘don’t-eat –out-anywhere’ stuff. Street delicacies have become brutalities, and are a big No-No. But can we really wait for the monsoon to terminate to dwell on these dainties? I guess no.

north indian restaurants saket

Street food doesn’t necessarily have to be eaten at the streets. There are a number of north Indian restaurants Saket where you can easily gobble down your favourite spice without even remotely worrying about the health consequences. The water that the high profile restaurants in south Delhi use is uncontaminated, and hence safe to be used for cooking purposes.  These restaurants hire professionals who make sure that contamination never meddles with taste and health. And that’s precisely what makes them stand apart from the various other restaurants in Delhi.

In a nutshell, spend your weekend at some restaurant in Saket, south Delhi that will offer delectable street spice with absolutely no compromise on your health. You can always let your appetite loose for the taste buds that demand to be fed only by the spice of street!

What goes behind a successful restaurant?

Good food is so much more than just having something well-cooked to satiate your taste buds; rather it is a complete experience. Pleasing all the senses together, it is an inseparable aspect of luxuries of life. This is why, the food industry is undergoing an exponential growth.

north indian restaurants in gurgaon

Picking up the cue on this, several north Indian restaurants in Gurgaon have revamped their services to offer nothing but the best. Taste obviously comes foremost, so, the best chefs are hired. Experienced and the best in the industry, they tactfully play with each and every ingredient to bring out the best flavours. Ideally, the rich and zesty tastes are preserved with perfection yet tweaked around to give it a distinctive tinge. And since every mother in Indian household knows how to cook excellent north Indian food, the expectation levels are high. The patrons want their favourite dishes served uniquely and then it is even more difficult to give it a signature hint and maintaining the consistency forever. The flexibility to play around is limited and yet you are expected to give outstanding results, says a chef at one of the best restaurants in Delhi

Then, as we know, mastering the taste buds isn’t the only challenge. The dish will be dressed well to give the patrons value for money. ‘Balti Meat’ would have lost half of its charm if it were not for the dressing of the curry in antique utensils with the cream and nut. Everything is touched-up to perfection before it is put on a table.

Ambience is the next necessary factor. The look and feel of the place should be of comfort. Depending on the kind of theme you want to adopt, it can either be kept simple on the cue of country kitchen format or for the five-star luxury, it can be furnished like a fine-dine. A soothing interior with a laid back interior works the best, though you are pen to experiment your own fancy ideas.

Friends with-‘out’ Benefits

As you must have guessed, but I did not, at that time, I was greeted with a familiar face-- the same golgappe wala. Our reactions were nothing like old friends, wild and fancy. Both of us recognized each other, acknowledged it silently and respected the fact. The first words we exchanged were not of complains or queries, instead I handed over the drink. Bewildered by the gesture, he didn’t know what to say. After some insistence and resistance he finally gulped it down in a single go.

Now relieved, I asked him about this particularly not so lucrative business when he could make the world’s best North Indian food Delhi. An expression passed over his face. If it was despair, it did not last more than a millisecond. He said, “It is the only respectable job I could do without start-up money Sir”. Finding me confused, he went ahead with his story.

He used to own a small dhaba serving North Indian cuisine in Delhi. They had a happy and decent life. But then, his wife was diagnosed with cancer and he used up everything he had, still failing to save her. After that, he started again from scratch with two daughters left to be taken care of. The shed near my house was his second attempt at life, out of nothing.

I was shocked! He went through so much and I never found a freckle of despair on the man’s face. In fact delicious North Indian food Delhi wasn’t his only speciality. The simple grin was typical of him, and everybody felt attracted due to its utter sincerity. Honestly, I never met a man whose smile could be more convincing. His was so real that you would doubt your own happiness’s authenticity. And yet, he was struggling with his own inner turmoil. I mean look at us, if it’s a bad day at work, be it the pesky co-passenger in metro or the grocery store keeper; everyone has to face the brunt. Yet he was here, his story of misery only half told.

On the second chance, he had to sell up everything, to marry off the elder daughter. And with the younger one still left, he was trying to make whatever sense he could, out of life by selling magazines and dailies. Even amid all this, the unfailing smile never left his face.

I was dumbstruck by his simplicity and philosophy. Resolved to help him, I approached one of my friends, who holds a good position at a five star brand restaurant and referred him for a job. Honestly, this was not kindness and it did not mean anything to me. But, it was a life changer, for that man. And I learnt an incredible lesson out of nothing…

So, the next time when you face a difficulty, think of others who are bearing greater burdens.

Dhaba by Claridges dishes out scrumptious dhaba-inspired cuisines

Dhaba By Claridges
I am a resident of Mumbai and last week, I went to Delhi to attend a corporate workshop which lasted for 7 days. It was the very first time that I visited Delhi and hence, after work, felt intrigued to try some roadside food for a change. As I steered my car off the road towards Hauz Rani, a boy around the age of 12 or 13 caught my attention and he waved at me as if signaling to follow him. After parking the car, I followed him and walked towards a table and sat. I enquired about the menu and the boy enthusiastically handed over a leaflet that had the names of dishes categorized into Vegetarian and Non-Vegetarian sections including the breads, salads, beverages and other eateries listed separately.

It was a simple menu which was by far least interesting and appetizing and hence, I looked around for other options. To my surprise the same boy suggested that I visit Dhaba Claridges which was just a few blocks away by car. He realized that I was probably looking at a better place to dine at and was also craving to relish some authentic dhaba-inspired cuisines.

To be honest, for a moment, before I realized that he was talking about ‘the’ restaurant, I heard Dhaba Claridges or something to that tune and hence, I assumed that he was probably telling me about some other roadside food joint situated nearby. Hence, I wasn’t a bit interested, but nevertheless thought that I should give it a try and so I took the directions and drove off.

The moment I arrived at Dhaba By Claridges, ‘fabulous’ was the only word that constantly hit my mind. Usually, one would imagine a roadside food joint as an open space with dim-lit thatched roofs under which a few wooden tables and benches are placed asymmetrically and largely occupied by truck drivers and highway commuters. These eating joints have consistently tempted people due to their rustic ambience and a serve of few dishes only but packed with flavor; call it soul food if you may like to give it a name.

However, contrary to the description above, Dhaba By Claridges was a complete surprise. Unlike the typical roadside food joints, this restaurant is located in heart of the capital city, within the DLF place, a South Delhi Mall. Its lip smacking menu complete with a truck mural, rustic interiors and servers donned in traditional Punjabi attire does pack a punch.
